Sauteed Onion & Goat Cheese Omelette.

- 2 fresh (preferably organic) eggs
- 1/2 medium red onion
- 4 tablespoons butter
- 3-4 oz of goat cheese
- 2-3 dashes of pepper to taste
- 1 medium avocado
- 1/2 sun dried tomato
Whip eggs together with one tablespoon of milk and combine with salt and pepper.
Slice onions into thin slices and cook in pan over a medium-high flame with butter. Remove from pan leaving butter in pan to cook eggs. Pour egg mixture into pan while it is still hot and turn edges to insure a firm up turned edge to egg as it firms. Reduce to low heat. Place cooked onions on top of the egg mixture as an even layer. Add the goat cheese and Sun Dried Tomato in small pinches also evenly across the top of the onions.
As egg firms, turn one half of egg over the other leaving the onion and goat cheese mixture between the folds of the egg. Continue cooking, flipping to other side as appropriate (one time only) to insure through cooking throughout.
Slice avocado into thin strips and place over omlette.
